How to Make Delicious Butter Using a KitchenAid Mixer

- Heavy whipping cream (I use raw cream that I scrape off the top of my raw milk, but any heavy cream will do!)
- Optional: salt, honey, herbs, or spices for flavored butter
Instructions:
1. Pour the heavy whipping cream into the KitchenAid mixer bowl. Make sure not to fill the bowl more than halfway to allow room for the cream to expand as it churns.
2. Using the whisk attachment, simply start mixing on medium speed. You'll notice the cream transforming through various stages: first, it will become whipped cream, and then the fat will begin to separate from the liquid (buttermilk). This process can take anywhere from 10-20 minutes depending on speed and cream concentration. I like to wrap a towel aroung the entire kitchenaid- this process can get messy if you aren't prepared!
3. Once the butterfat has visibly separated from the buttermilk, stop the mixer. This stage is characterized by the butter clumping together and the buttermilk splashing around the bowl. It's important to stop the mixer at this point to prevent the butter from becoming too hard and to avoid the buttermilk from splashing out of the bowl.
4. Place a fine-mesh sieve over a bowl and carefully pour the contents of the mixer bowl into the sieve to strain out the buttermilk. Save the buttermilk for baking or cooking, as it adds great flavor and moisture to recipes.
5. After straining, rinse the butter under cold water while gently kneading it to remove any remaining buttermilk. This step is crucial to prevent the butter from spoiling too quickly!
6. Optional: At this stage, you can add a pinch of salt, honey, herbs, or spices to customize the flavor of your butter. Simply knead the flavorings into the butter until evenly distributed.
7. Once your butter is ready, shape it into a log or press it into a mold of your choice. Wrap it tightly in parchment paper or plastic wrap and refrigerate until firm.
