The scientific difference between fruits & vegetables: how it applies to health
The scientific difference between fruits and vegetables is essential to growing closer to nature and repairing our relationship with food! This journey can be daunting, so I want to start simple with some solid science to (hopefully) inspire a newfound love for nutritious food. Knowledge is power! Main message: Fruits are the reproductive parts of the plant that contain seeds. These reproductive parts are formed by flowers. Generally, the concentration of defensive chemicals is lower in fruits than in vegetables. Vegetables are the leaves, stems, or root parts of the plant. Since these parts are allocated for growth and survival, their defensive chemicals are much higher, and sometimes, our bodies don’t want us to eat a lot of vegetables! I simply don’t believe vegetables are the most nutritious option, and for many of us, our bodies don’t want us to eat a lot of vegetables. Everyone is different, and I want to reduce shame around the misconception that we must eat LOTS of vegetables ALL the time!
